Moving into the recently vacated space at 313 Amsterdam Avenue, Bourke Street Bakery is the brainchild of Australian chef and baker Paul Allam. Founded in Sydney, Australia in 2004, Bourke Street Bakery is considered one of the best bakery chains in Australia and boasts over 11 locations across Sydney. Using only the best possible ingredients around, everything in Bourke Street Bakery is made by hand.

A truly passionate student of the craft of baking, Paul even hosts baking classes for fans who want to learn to bake their own bread. When word finally got out about Australia’s best-kept secret, Paul knew exactly where he wanted to open his first outpost bakery – New York. Moving into the space at 15 East 28th Street in 2019, Paul and his team were able to survive the incoming Covid-19 pandemic thanks to a surging demand for their signature hand-crafted baked goods.

Now, Paul and the team are finally ready to resume their expansion into New York. Moving into a vacant space at 313 Amertdam Avenue, the store was previously home to Piccolo Cafe. Piccolo was a hip all-day eatery that served the local community for nearly a decade before shutting its doors this year. Thankfully, the owners – Michele Massari and Alberto Ghezzi, recently opened a new restaurant called Lucciolia, which currently operates further north at 621 Amsterdam Avenue.

While you may have tried yourself how to make a sourdough during the quarantine, Paul Allam will definitely have a thing or two to teach you. If you want to refine your breadmaking technique, be sure to visit the bakery’s website for more information on when they will be holding their next class. And if you’re hungry, be sure to visit their first New York location on 28th Street to get a taste of what the future has to offer. Look forward to Bourke Street Bakery opening on Amsterdam Avenue in the first quarter of 2022.
