Carrot Express was founded 30 years ago by Chef Mario Laufer, a then-newcomer to the restaurant industry who wanted to promote a healthy lifestyle by offering quick, fresh, healthy food that would never sacrifice on taste. He began the brand in a gas station on Alton Road in South Beach, but before too long word of mouth quickly spread about Carrot Express’s quality, and Mario was soon able to expand his concept, initiating a path of action that he spend the next 30 years pursuing.

Today, Carrot Express now operates over 15 successful stores across South Florida. Mario’s dedication to serving customers with a smile while always preparing fresh, made-to-order dishes has since transformed the brand into one of Florida’s favorite fast-casual healthy restaurants. This May, Carrot Express initiated their first-ever New York expansion when they launched a brand new outpost at 18 West 23rd Street. The restaurant has been operating successfully for a few months now, and now Mario and his team are getting to continue their expansion into New York with a brand new location in Midtown.

Carrot Express’s latest New York expansion will be arriving at 135 West 41st Street, where it has secured an impressive 4,600 square foot lease. The location features both a ground floor restaurant as well as a lower level commissary kitchen. This is a particularly significant detail, as it means that as Carrot Express continues to expand, they can occupy smaller locations while preparing their food through the primary commissary kitchen.

Peter Bross, managing partner at Lee and Associates NYC, said in a statement that “As New Yorkers continue to return to the office, the need for fast and healthy options in central business districts is vital,” adding that “quick service restaurants like Carrot Express are playing a role in rejuvenating these districts by giving workers a wellness-focused and convenient option with walking distance from Bryant Park.”

While Carrot Express has only recently announced the new expansion on their social media channels, they haven’t yet indicated when they intend to open. For further updates as the the new outpost develops, you can follow Carrot Express on Instagram.
