The owners of Taqueria Ramírez, celebrated for having “NYC’s best tacos,” are expanding with a new venture, Carnitas Ramírez, in the East Village. This sister outpost is set to occupy the space of the former Café Cortadito, at 210 E. Third St.

Tania Apolinar and Giovanni Cervantes, the couple behind the successful Greenpoint eatery, announced the news on the Taqueria Ramírez Instagram page posting the above image.

Carnitas Ramírez will specialize in Michoacán-style carnitas, originating from the southern Mexican state where this dish was first created. Additionally, the establishment will offer a northern Mexico-inspired lonche de carnitas sandwich and quesadillas de sesos, which are made with brain.

While details around the official opening date are still forthcoming, Apolinar and Cervantes will continue teasing what’s to come by way of pop-ups, Eater New York is reporting.

Sauced will hold the first pop-up, at 47 Second Avenue near East Third Street, on Monday, April 1, 2024.
