Secret Shop & Speakeasy Scheduled For Spring Street

A fully curated artisanal shop and speakeasy is on its way.

Get ready New Yorkers, a brand new store & speakeasy concept is making its way to Spring Street next year. It’s called Pine & Polk and will be moving into the space at 300 Spring Street, between Hudson and Greenwich.

Pine & Polk is an inventive new concept from businesswomen Alyssa Golub and Lindsay Weiss. Styled as a two-in-one speakeasy and retail shop, both halves will operate together as a single business. One wing of the business will be an artisanal shop focusing on culinary offerings from local producers and women-led businesses, while the other wing of the business will be a hidden eating and drinking establishment.

Born and raised in New Jersey, Alyssa Golub has been working in the industry for years, ever since she graduated from Cornel’s School of Hotel Administration with a focus on food and beverage operations. A certified sommelier, Alyssa is bringing her expertise to Pine & Polk and will help curate a premium selection of local wines from women-lead growers.

Lindsay Weiss meanwhile is an experienced event marketing professional with over 15 years of experience in the industry. She knows better than anyone what generates hype amongst New Yorkers, having worked with luxury partners like American Express, The James Beard foundation, and The New York Times. Now Lindsay is taking her event and marketing expertise to provide an entirely new experience to her fellow New Yorkers.

Each space in Pine & Polk will have its own distinct character. Their favorite products will be featured in cocktails available in the secret bar, while their beautiful glassware and cocktail accessories will be available for purchase at the store. While the average New York speakeasy may be dark and dingy, the speakeasy at Pine & Polk will be light and airy, designed as a respite from the constant buzz of New York City. Together, the two concepts will work together to provide guests with a unique and completely unforgettable experience.

Pine & Polk will be replacing Union Bar and Kitchen at 300 Spring Street. Featuring 3,127 square feet of space, the location will have plenty of room to incorporate Lindsay and Alyssa’s bold new idea.
