Inspired by Paros, a Greek island in the Aegean Sea, brothers George Pagonis, formerly of Jose Andres’ Zaytinya, and Kyma, amongst others, and Nicholas Pagonis bring its authentic Greek cuisine to Tribeca’s destination dining scene. Paros is located at 211 W. Broadway, the 3,500 square foot space will include a 100 seat dining room and a 40 seat outdoor patio that wraps the restaurant. The restaurant officially opened on Wednesday, October 4th.

The completely renovated space will now offer guests an upscale dining experience showcasing dishes influenced by summers George and Nicholas spent in Paros with their family. The menu will focus primarily on fresh seafood with an extensive raw bar selection, grilled octopus and fresh fish flown in from Greece.

Menu highlights include:

  • Chitarra Pasta served with fresh lobster, tomato sauce and topped with grated mizithra cheese. 
  • Slow Roasted Lamb Shoulder with kefalograviera, feta, wrapped in filo, baked and served with smoked yogurt.
  • Marinated and grilled Filet Mignon Kebab served with harissa pita bread, crispy potatoes and topped with chimichurri.
  • Lamb Youvetsi, lamb shank slowly braised in the oven and served with orzo and pearl onions. 

The interior design is a direct reflection of Paros’ allure, capturing the essence of Cycladic architecture and the island’s streetscapes. The walls are bright white, a canvas that brings out the island’s beauty. The decor seamlessly integrates green elements, both real and artistic, evoking the island’s natural grace. The bar takes center stage, crafted from white marble reminiscent of Parian stone. Seating is adorned with shades of blue and carefully chosen striped patterns, creating an inviting space. The high ceilings allow the sunlight to flood in, giving the interior an open and airy feel, much like the island’s vast skies. Paros’s design and architecture can be credited to architect Ben Webne and execution by Shashi Construction Group. Design notes by Demetris Charalambous.

“Paros stands as a tribute to the beautiful island on which we spent our summers growing up,” said Nicholas Pagonis in a statement. “A true full circle moment for my brother and I, to share a piece of our family, and our culture, with New York City.”

“Right in the heart of Tribeca, Paros will transport each guest to the Greek Island, experiencing the enchantment, beauty, and magic of the Mediterranean through the atmosphere and, of course, the food,” said George Pagonis.

George and Nicholas’s restaurant experience started at an early age when their family opened a diner in Alexandria, Virginia. Working after school and weekends George and Nicholas were able to gain a strong foundation in the hospitality and culinary industry. Prior to opening Paros, George was the Culinary Director of Kyma Hudson Yards and Kyma Flatiron in New York City. Before working for Kyma, George joined the Avra Group, where he helped open Anassa Taverna in Astoria. George helped put mainland Greek cuisine, including daily whole animal roasting, on the map in the nation’s capital when he opened his own restaurant Kapnos in 2013. Nicholas Pagonis, like his brother, remained in the restaurant industry managing restaurants across the country, including the opening of Kyma Hudson Yards as General Manager.

Paros will be serving dinner 7 days a week and will begin serving lunch and brunch within the next few months.
