Balkan StrEAT is the latest concept to emerge from chef William Djuric. Djuric, who previously served as a line cook at Momofuku Ssam Bar, is marking his restaurant debut with Balkan StrEAT. Djuric has expanded his team and has partnered up with Jason Correa of TAO Group, who operate NY icons such as Rue 57, The Stanton Station, and Arlington Club.

The Balkans are a region in South Eastern Europe comprised of nations like Serbia, Croatia, Montenegro, Bosnia/Herzegovina, and Kosovo. While directly above Greece and a part of the geographic Balkans, Greek cuisine is generally accepted under the umbrella of “Mediterranean” and is considered separate from Balkan culture.

William describes his new venture as “A fast paced restaurant specializing in the street food from the Balkan region of South Eastern Europe.” Compared to a higher-status fine-dining restaurant, Balkan StrEAT will focus on quick Balkan street foods like ćevapi (grilled Serbian sausage) and boureks (savory pastries). With 1,908 square feet of space, Balkan StrEAT will be able to seat up to 14 people at one time.

Balkan StrEAT will be replacing Tri-Rite Deli at 353 Sixth Avenue, though Tri-Right has not been in operation for quite a few years. William and his team have already applied for the beer and wine license they wanted to acquire for the restaurant but are still waiting back to hear from the community board. They haven’t even launched a website or Instagram yet to announce the project, but once all the licenses have been approved, rest assured that they will release more information as soon as they’re ready.
