The team at Parched Hospitality Group announced that Isla & Co. opens in Midtown at Hotel Hendricks on August 11th serving Aussie-inspired food, coffee and cocktails all day and night.
Chef David Taylor is the new Executive Chef at Isla & Co. He has led restaurant and hotel kitchens in San Francisco, New Orleans, Prague and Tokyo. He began cooking at One Market Restaurant in San Francisco before spending three years working in European kitchens. David served as Executive Chef of A16 in San Francisco and Tokyo before moving to New Orleans to work with Alon Shaya as Culinary Operations Chef for BRG Hospitality bringing organizational support to restaurants Domenica, August and Shaya. He most recently consulted with Maison Kitsune during the launch of their first Cafe Kitsune in North America. David helmed the kitchen at Isla and will again at Isla & Co’s location at Hotel Hendricks in addition to Daintree. With nearly two decades of international culinary experience, Chef Taylor’s career began at One Market Restaurant in San Francisco before moving overseas to work in European kitchens. In 2010, David moved back west to serve as the executive chef of A16 in San Francisco in addition to the restaurant’s Tokyo outpost, before heading to New Orleans where he worked alongside Alon Shaya to oversee culinary operations for BRG Hospitality Group’s restaurants Domenica, August and Shaya. Most recently, David consulted with Maison Kitsune on the launch of their first Cafe Kitsune location in North America. At Isla, David draws upon his expansive culinary expertise with a menu that showcases inventive renditions on brasserie classics through a seasonal, global lens.
Brunch will be served daily till 4pm and includes options like a Sambal Scramble, Brekkie Roll, Smoked Salmon Benedict, Brioche French Toast, Griddled Banana Bread, an Isla & Co. Burger, and Pulled Pork Sandwich with cabbage slaw, pickled onion and served with fries. Signature dinner dishes include Spicy Shrimp Vodka Rigatoni, Fish & Chips, Braised Short Ribs, Thai Green Vegetable Curry and the Half Chicken with seasonal roasted vegetables.
Isla & Co. delivers a specialty coffee program inspired by Australian coffee culture serving Hole in the Wall Espresso. Isla & Co. features two signature house blends suitable for Espresso and drip extraction originating from Ethiopia and the Americas and roasted in Denver Colorado.
Isla & Co. offers an extensive wine list with a large focus on natural and organic wines, craft beers and signature cocktails like the Wizard of Aus – Starward Whiskey, lemon juice, sugar, egg white, Shiraz wine float, Isla Old Fashioned -bourbon, Amaro Montenegro, Eucalyptus bitters, and The Taipan – Hiatus Tequila, spicy pepper, yuzu, agave, shiso alongside brunch cocktail favorites like a mimosa and their house blend bloody mary. All beverages are served from brunch through to dusk.
