Arvine Hospitality, LLC has recently filed plans to open a new French restaurant and wine bar in SoHo, taking over the space formerly occupied by French Cheese Board, at 56 Spring Street.

The new establishment, yet to be named, is spearheaded by sommelier Adrien Falcon, known for his work at Michelin star restaurants such as Marc Veyrat, Pierre Gagnaire, Alain Ducasse, and Le Grand Vefour.

Falcon’s vision for the restaurant is to “create a place which is beyond a wine bar or a restaurant, a place where the rules of the traditional dining could be reinvented, and where hospitality goes back to its basics. We aim to create the best neighborhood ambiance led by food featuring French influenced tapas-like dishes, an innovative beverage program, and amazing hospitality in an upbeat atmosphere,” as revealed in the filing.

Falcon on Wednesday confirmed the plans in a telephone conversation with What Now New York, but the restaurateur was not prepared to discuss the restaurant this early in the pre-opening process.

The proposed menu for the new eatery is a blend of traditional and modern French cuisine. Starters include an Alpine Charcuterie & Tomato Jam, Garden State Crudités & Dips, and Shishito & Sea Salt. The side dishes are set to feature items like Potato Gnocchi, French Fries, and Asparagus. For the main course, the restaurant plans to offer entrees such as Steak & Frites, Lobster & Frites, and a Pork Chop with Mushrooms & Espelette.
