The couple met while working in the restaurant industry in New York City, where they have been living for the past eight years. She is from California, and he hails from Mexico. Valasquez bills their first solo concept as a “slow, quiet, relaxed and cozy” community restaurant with an ever-changing select tapas menu. As reflected in its namesake it will serve just nine appetizers of various worldly cuisines, nine local wines and nine local beers. Its menu will rotate every two weeks.

“It’s going to be constant movement and evolution,” he tells What Now New York. “We want to bring something new to the community.”

It is currently slated to open at 4 p.m. and close at midnight. Both have worked at various restaurants in the city. She has worked at Boerum Hill’s fine dining spot, Maison Sun, while he has worked at French, Italian and Latin restaurants.
