TabeTomo Founders Plot New Sushi Concept For St Marks Place

AYS Hospitality Group is a fast growing hospitality management company that celebrates the art of hospitality through culture, expertise, innovation, and the professional development of staff. The group was founded by Chef Tomotsugu Kubo and business partner Mier Wang, a New York based entrepreneur and investor with a special affinity for restaurants. Together, the two established the wildly popular TabeTomo restaurant, known for specializing in Isukemen, a unique form of dipping ramen that features a specialty broth that takes Chef Kubo over 60 hours to prepare.

In addition to TabeTomo and it’s fast-casual cousin TomoTomo, Wang and Kubo have been spearheading the private omakase movement with their innovative Tomakase concept. Tomakase takes chef’s choice sushi to the next level by inviting chefs into the comfort of your own home to serve a fully customized, private omakase experience. Featuring a team of over twenty world class chefs lead by Executive Chefs Kenji Kitahara and Toshio Matsuoka, Tomakase has managed to create one of the most intimate and personalized omakase concepts that can be found in the city.

Now that life is beginning to return to normal though and restaurants are beginning to resume their pre-pandemic operations, Wang and Kubo are once again gearing up to debut a brand new brick-and-mortar sushi concept. While the name has yet to be determined, Wang has already secured the lease for 120 St Marks Place and is currently getting ready to meet with the community board to acquire a liquor license for his new project. The space is appropriately small for the concept, and will feature only eight seats at the table with an additional six seat sushi bar, capable of seating a maximum of 14 guests at one time.

The concept is envisioned as an intimate omakase experience that will place a special emphasis on showcasing their rice, offering guests a unique insight into the often underappreciated work that goes into harvesting and selecting the perfect sushi rice. According to a sample menu provided by Wang, the omakase course will feature an enlightening history lesson about the origins of sushi and the many different kinds of fish they intend to serve. Customers will also evidently be provided with a postcard and fountain pen and will be encouraged to write letters about their sushi experience (which is a particularly exciting detail to your fountain-pen-obsessed author). The menu will feature a series of exhilarating courses like “Silver on the ocean floor,” “Dancing queen of the sea”, and “Circle of life”, serving expertly crafted dishes made with only the finest cuts of fish available.

As an omakase concept, the new restaurant will exclusively serve dinner and is expected to operate from 5:00 PM – 12:00 AM every day. While further information regarding their schedule for opening can’t be released until Wang has successfully acquired the liquor license for the space, you can always visit TabeTomo to get to know the team behind the new concept a little better.
