Pop Up Grocer is a brand new grocery store concept that seeks to elevate the traditionally mundane shopping experience. The brand was established by founder Emily Schildt, an ambitious entrepreneur who endeavored to bring people together in a world that seems to be increasingly isolated. Emily has worked as a brand consultant for recognizable companies like Pret A Manger, Ciobani, Zocdoc, and Popcorn Indiana. In 2019, Emily decided to use her talents to open up a concept of her own, and Pop Up Grocer was born.

Pop Up Grocer was started as a response to anti-consumer practices from major grocery retailers. As emily puts it, most supermarket ailes aren’t organized with the consumer in mind, instead they prioritize “Big Brands” that can pay top dollar for eye-level shelf placement, shunning smaller and independent brands. Pop Up Grocer was made specifically for “curious, conscious customers” and seeks to offer shoppers better ingredients and highlight local producers. Through Pop Up Grocer, customers can discover products that are hard to find elsewhere and have some fun in the process. Instead of a confusing maze that disorients customers to trick them into buying more, Emily established a store that would invite customers it with a playful aesthetic and purposeful organization.

Pop Up Grocer currently operates a few locations across Denver, DC, Miami, and Chicago, and they even opened up a temporary Pop Up in Brooklyn in 2020. Now though, Emily has secured a brand new lease for their “NYC Flagship”, which is expected to open this Winter at 205 Bleecker Street. Located in a beautiful corner building at the intersection of Bleecker, Minetta Street, and Sixth Avenue, the space was formerly home to Le Pain Quotidien.

The location offers a total 2,985 square feet between the ground floor and basement, and will also feature its own cafe with a full coffee bar. The cafe will be able to seat 11 guests inside, with an additional standing bar for quick service. Additionally, Emily is looking to acquire a beer and wine license for the new Pop Up Grocer, and is proposing operating hours of 7:00 AM – 10:00 PM every day, seven days a week.
