Carlo Olcese, one of the partners in the venture, told What Now New York that the team hopes to bring a new spin on the upscale cocktail bar to the space. They hope to blend a neighborhood bar feel with the upscale beverage program of a modern cocktail bar.
“We are a bar being opened by bartenders for everybody,” Olcese said. “We want to bring this special experience that you get at cocktail bars today where you get really high-level cocktails and really interesting flavors, but we want to bring in another element that you might see at a local neighborhood bar where the bartender is a little bit more involved in your experience.”
Olcese said a veteran, acclaimed bartender is heading up the beverage program. There will also be a simple food menu that will pair well with the cocktail selection. Customers can expect items like cheese boards, salamis and sandwiches.
The bar will be in an intimate space along Eldridge Street, and Olcese said they are emphasizing the cultivation of the bartender-customer relationship to change the traditional high-end cocktail bar experience.
“We want to bring an informality into the experience,” Olcese said.
Currently, the team is focused on obtaining their liquor license. Once that is secured, they hope to move forward with the project, aiming for an opening in Q2 of 2025.
