The Grimoire Group is a well established consulting group that has worked with some of the finest names in NYC Hospitality. The company was established by owners Andrew Giaume and business partner Ed Shahin, two industry veterans who have spent over 15 years working with high volume, upscale restaurant, hotel, lounge, and nightlife operations. Additionally, Andrew currently serves as the Director of Operations at The Surf Lodge, one of Montauk’s premiere seaside hotels.

Now, Andrew and Ed have just signed the lease to bring a brand new Asian fusion restaurant to 133 West 30th Street, otherwise known as 31 Penn Plaza. The new restaurant will occupy 3,761 feet on the ground floor, 1,993 square feet in the basement, and an additional 967 square feet on the mezzanine floor. The two decided upon a restaurant in Midtown out of a desire to create an accessible eatery that would be popular among tourists and locals alike.

While the new restaurant has yet to be officially named, Giaume describes the concept as “fun, casual, but chic” and intends to offer a fusion of Japanese and Korean-inspired dishes. Giaume stated in a press release that “One of the things we really wanted to do was bring back the idea that going out is meant to be an experience. When dining out in New York, you really get to be transported someplace else and have an experience that you wouldn’t have anywhere else.”

The new restaurant will be joining recognizable restaurants like Ichiran and Pennsylvania 6, who also make their home at 31 Penn Plaza. Located less than a block from Madison Square Garden and Penn Station, the new restaurant is well suited to attract plenty of foot traffic. Unfortunately, Giaume and his team are still too early into development to have any social media channels for the new concept, so you will just need to keep your eyes on the space for future updates.
