Claud Restaurant Founders To Establish New Raw Bar Concept

Claud will soon have a new raw bar occupying the space above it.

A brand new raw bar restaurant will be enhancing the profile of East 10th Street’s latest and most elegant concept.

Claud is a recently developed upscale restaurant and wine bar based out of the East Village. Inspired by the European style of dining, Claud was established by hospitality vets Joshua Pinsky and Chase Sinzer, two titans of New York’s restaurant industry. Chef Pinsky was the former executive chef at Momofuku from 2012 to 2020, while Chase Sinzer was the Wine Director at the three-Michelin starred Chef’s Table at Brooklyn Fare. Together, the two partnered up post-pandemic to establish a new European concept of their own design, and Claud was born earlier this year.

In fact, the story was first broken by your handsome and humble reporter at What Now New York earlier this January. We first reported that Claud would be replacing Ikinari Steakhouse, a popular quick-service steak restaurant established in the lower level of 90 East 10th Street. Now that Claud is open and operating quite successfully though, more information has been revealed about the team’s plans for the upper level of 90 East 10th Street, which currently houses the wellness destination Montauk Salt Cave.

Having closed down for good earlier this year, Montauk Salt Cave will soon be replaced by Penny, a seafood restaurant and wine bar that will function as a sister restaurant to Claud. Penny is currently expected to offer a raw bar service from 4:00 PM – 11:30 PM, Thursday – Sunday, offering an eclectic assortment of East and West Coast oysters, Little Neck clams, Razor clams, and scallops. Penny will also serve other seafood dishes like shrimp cocktails, stone crab claws, blue crap salad, and broiled mussels, alongside sides like bread & butter and cheese plates. Of course, given Mr. Sinzer’s famed beverage expertise, Penny is also expected to have a robust wine selection that will pair perfectly with Penny’s seafood offerings.

The location formerly occupied by Montauk Salt Cafe is expected to be able to seat a total of 41 guests inside, and will feature one 25 foot long standing bar, and a small curved 6 foot bar. Operating directly above Claud, the two concepts will pair well together and offer guests an unforgettable culinary experience no matter their preferences.
