White is not new to the 520 Madison Avenue location where Santi will open on Nov. 4. The space previously housed his acclaimed restaurant Alto.
“When we got the opportunity to do a restaurant in the same space where he had so much success, we really jumped at the chance,” Bronster said.
Santi is a culmination of two and a half years of White and Bronster’s time and effort. The interior, which Bronster refers to as “stunning,” has several sections, including a bar, den, atrium and a mezzanine overlooking the bar and atrium. Eventually, the space will offer outdoor cafe seating as well to supplement the 165-seat interior.
“The artwork is mine and Michael’s from our travels,” Bronster said. “The menu is a culmination of Michael’s career. It’s a look back on his travels in the south of France, in the Emilia Romagna region of Italy and the Amalfi coast in southern Italy. It’s a reinterpretation and a step forward, but he really looked at his entire journey.”
The fine-dining menu will be pan-Italian with French influences. Customers can expect a robust crudo section, handmade pastas and protein-based dishes. The beverage program will feature an extensive French and Italian wine list as well as cocktails. The spot will be open for both lunch and dinner.
Santi will be the third concept in B Bianco Hospitality’s portfolio since the group’s inception in 2020. White and Bronster have three other concepts in the works in Coral Gables, Dallas and Puerto Rico.
